On my HDX if I wanted to remove hubbys gmail account I'd go into the email app. Select the email address which is listed under Add Account, then scroll to the bottom of the page displayed and select Delete Account from Device. That would leave my email app without any email account loaded. I would think its the same type of thing for the HD6.
Although we have a HD6 as well as the HDX we don't have any email accounts loaded into it so I can't check, sorry.
