I'd go the old fashioned way: rsync or tarballs; dd feels a bit overkill, and there might be some inherent quirks tin the way the userstore is handled, so, meh.
Right now I keep a sideloaded copy of the entire "sdcard" files (via USB) on an external HD but these of course would not restore all the root files. Are we sure that the "dd" route is to iffy to trust? I used it a couple of centuries ago on my SimpleTouch with great success.
