When I create the catalog it appears to sort the books by author surname as default
Is what I want possible. I know I can reorder the files manually in "Edit Book" or using Sigil but that way is very laborious

Any help would be appreciated.
Thanks

AFAIK The Catalog tool (right-click Convert:Catalog) only makes catalogs in a common field form. It does respect the "Selection" of books when launched.

You may need to grow your own
Use the CLI: calibredb.exe --list (options)
See the online CLI documentation for calibredb.exe for the available options include your #priority custom field

once you have the CSV output, use your favorite spreadsheet (Excel/Libre Office...) to sort, format and print
