Since a "page" can be so variable with ebooks, I think a workable option is to use the number of the specific screen you are on and the total number of screens in the ebook (such as "121 of 430"), basically treating each screen of information as one page. Although both numbers can vary due to factors such as screen size, font size, line spacing, and so on, it would give you a clear indication of how far you have progressed in the ebook, and how far you have to go. I think this would be less confusing than a numbering system where a "page" could be 2, 3, 4, or more screens of information, with each new page starting somewhere on the screen.
