The only 'full' colour E-Ink screens currently use RGBW filters in front of a B&W EInk display, so that they are lower resolution and contrast. 'Triton' was the name for these.

Currently, the best hope for a low power high contrast colour display seems to be LiquaVista, which Amazon bought a couple of years ago.
