It would depend on the app.
Most streaming apps do dynamic quality depending on available bandwidth but some are much better at it than others.
My experiences with live streaming ESPN on XBOX are indistinguishable from the cable feed (720p), while MLB.TV on XBOX sacrifices a bit of video quality (slightly lower frame rate) to maintain resolution. Given that they are doing on-the-fly conversion of fast motion 1080i video it is understandable and not annoying. Just a bit odd-looking...

The CBS app on the Fire Stick should give you an idea of what ESPN should aspire to on it: very good live video with no noticeable frame rate degradation.
