It will know. The reader logs you farthest read page, regardless if you go back or not.
I think my old Nook or one of the reader apps I use has the option to skip to the farthest point read in the book... My guess is it would be ridiculously easy for them to see what is the furthest page in a book a person read to.
That said, this is a very vague method. How should they know you didn't just skip to some part at the end? A better method to check is time + last page read. That way they can tell if you've read anything that's between the cover and table of contents/copyright page.
