Using the 'Chambers 1908' as an example, I renamed Chambers1908.zip to dicthtml-it.zip and replaced the original Italian monolingual dictionary, .kobo/dict/dicthtml-it.zip (saving original somewhere safe, of course).
Then to use it, if you long-press a word and it's not found in the normal English dictionary, just tap the language sub-menu arrow in the pop-up and select Italiano. The Kobo will look up the word in the dicthtml-it.zip file (now Chambers 1908).

I put another dictionary on the H2O and I replaced the Portuguese to English dictionary. When I next connect the H2O to the computer, I'll make it just the Portuguese dictionary.
