As for the not-enough-flour batch, maybe you could turn them into drop cookies if you can't roll them out? Unless the texture's totally wrong for that.
* Disclaimer: I'm a lousy, lazy cook who very, very rarely attempts baking, so you're probably much better off not listening to any kitchen advice I have to give that doesn't involve nuking stuff until it's done.

I prefer nuking 95% due to laziness but I do love to bake sweets. Most of the time it's a box mix but this is the first time in seven years I have had a oven that works correctly. My old oven cooked everything uneven and at the wrong temperature and the door didn't shut all the way. This one seems to work beautifully and is digital so I am cooking from scratch but out of practice a bit but I did find my 15 year old B&D hand mixer. It still shoots sparks at me sometimes but works!
I'm not sure hubby would eat those tarts.

He's a bit picky. The Jam thumb prints might be an option.
