Let's see, you, on Inkscape must do NOTHING You only must open the .pdf in Inkscape, select the table (just click on the center of it), next select (in the "File" menu) the "Document Properties..." command and in the dialog that appears, to select the option "Resize page to content..." and after that, save all as "Plain .svg". You don't have to convert the selected table to paths!; ok?

Watch the code of the .svg image You'll see is the text is generated by path or not.
