Three reasons:

1. Version 1.7.2 is easier to install in Linux than later versions.

2. Adobe has issued security bulletins for versions 2.0.0 and 2.0.1.

3. using versions 3.0.0 or later may (depending on whether the retailer has enabled this feature) result in the book being downloaded with the newer DRM scheme, which is not (yet) able to be removed. Moreover, once you have downloaded a book with the new DRM scheme, you can't download it again using the old DRM scheme, even if you revert to an earlier version of ADE.
