Re-reading my post I see that I hadn't mentioned Edit Book in that particular one. I had mentioned it earlier and probably didn't think it would be necessary to mention it again that's what I was using to view the internal files of the EPUB.

I hadn't known that by default Edit Books embedded the metadata upon opening the book so, sorry that I caused some confusion there. I was simply reporting what I saw without apparently knowing all the facts.
