That actually isn't an optimal way of doing it because the problem is that you cause a conversion to happen.

The best way to update the cover (other then using Modify ePub) is to use Edit Book, replace the cover image in the ePub with the one you want and then check out the cover HTML to make sure it['s displaying the cover properly and if not, fix that and done.
