If you need more info on the menu button and uninstalling apps look in the Samsung manual.

As pointed out you get to the book settings for Moonreader+ by tapping the center of any page in a book.

From Moon+Reader FAQ:

After you open a book, you can tap middle of the screen to invoke the reader bar for all customizable options.
Since your device has a menu key I'm guessing you need to use it, but tapping the center still may work.
