Just the
Add/Remove items
Rename
Remove from Device
and Delete
in the context menu from long pressing on a collection. Wonder if that went away recently?

They have changed it, see:

'Remove from Device' moves it to the Cloud. So you can have a different collection subset on different devices (at least on the new Kindles).
So Show In All Views is gone, except on older Kindles. I don't use that feature, myself.
