Buy a new one that is still shipping with the older version of the firmware.
Re-install everything on that Kindle.
You might want to install one (or both) of our OTA blockers this time.

The only thing you can do on the one with 5.6.1 installed (for now) is to read books.

Note: You need skill installing and using the serial port connection to downgrade this Kindle after updating to 5.6.1 without the current jailbreak and supporting stuff installed.
