The process of Adding books requires exclusive access to the database. hence it has to prevent the user from doing anything whilst that process is happening, the way it does that is to display a progress bar. Some calibre operations do not require exclusive access to the database - such as conversion, PI's such Count Pages etc - that's because they operate on the book format files rather than the database. The dialogue boxes that are 'dismissable' are those that inform the user of something - most fall into the "Are you sure you wanna do this' category.
In order to prove your assertion that earlier versions of calibre didn't have the Add Books progress bar you could install the portable edition of an earlier version.
If you want to rollback the installed version then you will have to uninstall the version you have before you can install an older version. It will not remove your libraries or configuration data, but to be safe I would suggest you backup your libraries and configuration before doing it.
