from this point, my file explorer windows are unable to access the device.

Even manually mounting the tablet with jmtpfs works from the command line - I can mount, then touch files, but as soon as I start calibre, the mount is broken and starts to report "input output error".

This appears to be a calibre issue not a linux issue.
I have found that connecting through calibre sometimes doesn't work with one of my usb cables, but once I change the cable, it works. Can't hurt to try if you have a spare cable.
