The Kobo Glo touch screen is sensitive throughout it's whole surface, and the cover (book style) does not make it any easier to hold without accidentally brushing the touch screen. (And I have carpal tunnel, which does not help....)

On the Glo, no matter which setting I choose, the whole screen remains active. Are there any e-readers that have the option of shrinking the touch screen area to a smaller surface? So I can hold the corners, or top, or bottom?

There's no point to a touch screen that doesn't have the entire screen touchable. No, you won't get a Reader that only has a partial touch. It's all or nothing. The solution is to not touch the screen when holding it unless you want to touch the screen. If the bezel is too small for you, get a cover where you can hold onto the cover.
