Boot time is probably about 40 seconds. Alittle longer than the 505, but not terribly noticeable. On the other hand, the fact that it doesn't go to sleep like the 505 can be a problem if you are using it for frequently throughout the day, but still need to shut it down in between. Then you have to wait each time. For me it hasn't been a terrible inconvenience, since I usually read at night - I boot it up, by the time I settle in bed it's ready, then I turn it off at the end - the battery lasted almost a week this way.
I am hoping that a Sleep function will be implemented, now that the source has been opened and (talented:-) volunteers are working on it.
The stock software and UI is not much worse than the 505, but nowhere near as good as the PRS-700.
I haven't used it to take notes, but people seem to like it.
For me, the screen is what makes it all worth it - it is considerably larger than the 505/700 and (again for me) it makes reading much more book-like.
