@hurr88icane - for the add and convert - see Preferences->Add, in particular the Automatic Adding tab

To delete all formats of a given type (eg. MOBI) search formats:"=MOBI", select all books (ctrl/a), Remove files of a specific format (alt/del), select MOBI, press enter - job done.
