Rating is not part of the read information. There is no way to set the rating from CC. It must be done in calibre.

There are two "memory aides" available to help you remember which books to rate the next time you connect as a wireless device. The first is to sort the book list by read date (synced from CC). That will put the last books you read at the top so you can see which ones are not rated.

The second is to use CC's "Mark updates in calibre" option (settings, marking books read, mark updates). Checking this option will make calibre put a "Temp mark" on any book that where the read information changed (date or check mark) when you connect the device to calibre. You then search for marked:true in calibre and update any information you wish in those books. Note that the marks are really temporary. They will go away when you exit calibre.
