If you expect it to have any detail at all I would think 300 would be minimum. You can display an image a different size that it really is and some eBook Readers will allow you to zoom this image for more detail however, others may not. A minimal reader has a 800 x 600 pixel screen so wrapping should be fine. Many readers these days have much higher resolution. A 300 px image might look small on a higher res screen. Check our wiki for all sorts of readers. A large pixel image will be rescaled to fit the screen but of course it makes the book bigger. Only you can decide on the tradeoffs for your book. A viewer such as Adobe Digital Editions will let you resize the window to see the effect on the image.
