paoletto - If there's no entry in Tweaks->Keyboard - and for that dialogue I don't believe there are any - then you would have to change your source to replace
Ctrl/N with Ctrl/→ Alt/N with Alt/→.
I'll go out on a limb and say that accelerator keys are never reconfigurable in calibre, nor for that matter in anything else - how where's my flak jacket
