A lot of restaurants do that, but Wifi coffee houses are a tad too specialized to work that strategy. Besides which, I've seen endangered restaurants give up and leave Wifi on all the time, since droves and trickles of web-surfing customers are better than none at all.

I've also seen situations in which customers were asked to leave for lingering at tables for too long. In the past, that would have been done regularly. These years, niche places have to fret over nasty Yelp reviews, too many of which can help to close them down.
