I'm planning on doing some baking when I'm on vacation next month (the apartment's got a great oven). One of the things I want to make is a big batch of gingerbread cookies. A nearby shop sells packets of ready mixed gingerbread spice and they have the recipe on their website.
The only problem is that according to that recipe you need to use Lyle's Golden Syrup. They don't sell that. There is one store locally to me that sells it but it's sold out and they don't expect the next shipment from the US until mid-November, which is too late for me.
Does anybody know if I can substitute Lyle's Golden Syrup for Maple Syrup (which is easier to get)?

1 teaspoon baking soda
4 tablespoons Lyle's Golden Syrup
1 egg
3 teaspoons gingerbread spices
