Eink itself is a thin sheet of flexible plastic. It is the electronics behind that thin flexible sheet of plastic that sit on a sheet of glass. Glass is heavy and has a tendency to shatter or break easily. So benefits of a flexible screen would be weight reduction and shatter proofing the screen. I doubt many will need a truly flexible device - it is not impossible to make a complete device that is like a hard rubber.
