Try closing and reopening the book in ebook-viewer.

As Kovid said, the book will be updated with calibre metadata automatically, when opening with the editor. (I believe the changes are automatically written to disk whether you save or not.)

Opening the book subsequently would show the new version.

The viewer still has the book open using a cached unpacking of the ebook.
