I was curious, so I converted a book using the site. When I edited the converted the book, it has the following line in it:

The site is using calibre as the back-end for the conversion. It might be using different tools for different formats, but I doubt it.

As both you and the site are using calibre, it has to be options in the conversion or something in the book. It might be that the language in the calibre library is different to that in the book. Calibre will update the language before the conversion. But, if you used a copy of the book that hadn't been updated, it might have different language.
