From what I've read, Apple's research has shown that a touch screen device with a keyboard isn't very ergonomic. In general, people prefer to have the mouse/trackpad right next to the keyboard so they don't have to move their hand large distances.

Apple tends to design their products with features focused on what 90% of their market wants, rather than things that are wanted by a small percentage.
