You're doing absolutely nothing. It just doesn't work that way.

When you send a book to the device, calibre updates the book with the current metadata, the device reads book to get the metadata and stores it. When you connect, calibre matches the books on the device to the books in the library if it can. But, other than the series info, it doesn't update the metadata on the device. The metadata shown in the device list comes from the library if the book is in the library.

Strictly, if you want to update the metadata on the device, you need to delete the book from the device and resend the book. But, it can be done using my Kobo Utilities plugin. Among other things, it has an option to do update the metadata on the device. And it will set more metadata than the device will read from the books.
