Here are a few of the really good stand-alone books I have read that are >500 pages.

Cryptonomicon - Neal Stephenson - 1100+ pages
11/22/63 - Stephen King - 880 pages - Yes, it is Stephen King, but I don't consider it horror. Very good read.
American Gods - Neil Gaiman (already listed/linked above) - 650 pages
Darwin's Radio - Greg Bear - 540 pages - Might have a sequel, but this is stand-alone.
The Golem and the Jinni - Helene Wecker - 510 pages
Cloud Atlas - David Mitchell - 510 pages

The other 50 books over 500 pages that I have read are all series books.
