I was trying to repack the epub using ePubPack (using mimetype file), so it created the file, but the characters are unreadable (like dingbats)

If you just need a bigger screen, you can connect iPad to monitor using vga/hdmi adapter or mirror it to pc wirelessly

or you can just take 20-30 screenshots and transfer them to computer for that day reading session.
