You're right Amazon never does coupons like that. Sounds like a phishing email. A good spam filter would catch it.
Kobo sends these We Missed You emails now and then it took 6 months to get that 90% off last one was 45% off to get me to buy something. Oh and I use Shop and Earn through Swagbucks and it went through for the first time! I got my pending email this morning!

I had tried and tried before with no luck. So not only did I get 3 books at 90% off. I also got back $0.25 (25SB)
You should never click on a link in a email no matter who it is without copying the link and pasting it in notepad. This will allow you to examine the link to make sure it's legit.
