eInk readers are basically just, well, e-readers: they're black and white / greyscale (the mainstream ones), and they're excellently suited for reading fiction in some proper ebook format (epub or mobi/azw).

They're not very good for PDFs - at least the ordinary 6'' devices - and images will be black and white / greyscale.

Depending on what you mean by "Office support" and how much you plan to use PDFs, it looks like a tablet is what you need. Many people are perfectly happy also reading books on them (while others don't like it much or get a headache or eye strain - this is highly personal though).

Any decent current Android-based tablet (including the Kindle Fires) should fit your needs, I'd think, but I don't really know which apps can easily be installed on the store-branded (Amazon and Kobo) ones.
