If there is no embedded font, then you either get the default font or you can choose the one you want from the list of possible fonts. It all depends on which reader you have. Some have more font capability then others. Kindle has limited font switching, Sony has some font switching depending on the model. Kobo has very good font switching with the ability to sideload your own choices.
Why would you want to embed a font just to get what the publisher left out? How do you even know which font to embed? Just because there is no embedded font does not mean there should be one.
