The books metadata seems to lack 'Language' in the metadata, which is why it assumes the system language.
are you reading title (metadata) from the file name? That prevents the language metatag from being read.

Set a automatic tag. Preferences Adding books: Tags to apply when adding a book: Check Language

Then you can quickly review (search for that tag) books and possibly use Bulk metadata edit mode to update the Language
