Never really got heavily enough into FR to want to read them all. I pretty much just picked and chose some to read here and there. RA Salvatore and Elaine Cunningham come to mind.

I did read, and still own in paper, all of the old Battletech novels (unless you count MechWarrior: Dark Age) but probably would have burned out on those if they'd gotten to be as large of a catalog as FR is.
