Sounds like you need to get to know your Kindle Fire better.
Gestures can be troublesome when you're new to them.
When you're doing the zoom gesture, make sure that your fingers aren't hitting the screen at separate times. Otherwise it's just registering them as taps, which is why it's selecting the text instead of doing what you want it to be doing.
