Calibre stores the settings used for PREVIOUS conversion of that BOOK.

Just Changing PREFERENCES will have no effect FOR THAT BOOK . The setting applies only NEW-FUTURE conversions. You can make Calibre forget that the book was converted by using the appropriate Tick (bulk) or Button (Single)

Otherwise: fine tune the setting in the Conversion Dialog to prevent clearing other 'adjustments' made for that book
