You can define the presentation order of custom columns in metadata edit via the
Order of custom column(s) in edit metadata Tweak. But you can't exclude columns.

Which would seem to imply you have
Preferences->Behaviour->Edit metadata (single) layout set to Default, in which case the Download button is on the "Basic Metadata" tab only - so I can't imagine how custom columns can hide the Download button. With the Default layout you would need a small display area or use large fonts to hide the button.
However, I can imagine that the button might 'disappear' with the
All-on-1 Tab or
Compact layouts
Unfortunately the
Download button doesn't have a unique accelerator key, it shares 'alt/d' with three other columns I
Ds,
Date and Publishe
d. If it had a unique accelerator you could use it and then press Enter. I have a vague memory that at time it was 'alt/w', but I may be misremembering.
