You're also conflating two different issues. Setting the 'Text' semantic in Sigil does work the way it's supposed to. It's just that Amazon reserves the right to not honor that start point in epubs you upload to KDP.
It's not so much a Sigil/epub question as it is a; "how can I 'game' Amazon into converting my epub the way I want them to using Sigil?" question.
