When I was single and made stew in the crock pot I would always leave out the potatoes. That way, I could divide the portions and freeze a few -- potatoes don't freeze well. Then, I would microwave a potato before heating up some stew and mix it in. Worked well for me. But, then, I haven't had to worry about freezing extra portions since I had kids.
