Times New Roman is fine for personal use. But if you should expand your horizons to publishing it, you will need to choose something else if you specify a font at all. TNR is not a free font, but one of those that might require a contract with a font foundry which would likely wipe out any profits.
If you open this opus in calibre editor, you might be able to see what is acting on your table stuff with a recent feature, view, live css. The editor can be opened separately and without changing the epub the way a conversion would do.
