I found another plugin that actually very easily allowed me to convert the file to an epub and almost instantly too. It still won't display properly in the Calibre ebook viewer though, but I can view it on my tablet app, though the pagination is a bit weird.
If anyone is interested in figuring out why this file won't display the images properly in Calibre's ebook viewer, a sample can be downloaded from Amazon. I found that there was the same problem with the sample as with the full ebook.

Anyway thanks again to everyone that took the time to respond. I'll be interested if anyone figures this mystery out, but for now at least I found a way to convert and view the file.
