This isn't all that shocking. He's been doing this for decades, and he has a system that works for him.

I had a teacher in college who preferred using a typewriter because it forced him to compose his paragraphs in his head. He was an excellent and accomplished writer, so obviously it worked for him.

As for DOS vs. Windows, a lot of people who prefer DOS do so because it is pure text, and they are not distracted into fiddling around with formatting instead of concentrating on writing. For people that use Windows, there are specialized word processors that mimic the low-tech DOS UI, and have light text on dark backgrounds because it is easier on the eyes.
