I got this great little book free from Amazon a couple of years ago and it's become one of my favorites that I use frequently: http://www.amazon.com/dp/B00635LOVK/ref=cm_sw_su_dp

It's not free at the moment but is included in the Kindle Owners Lending Library so you can borrow it for free if you qualify (Prime members with a Kindle device) and it's well-worth the $2.99 purchase price if you have any interest in home curing corned beef and pastrami. The recipes and techniques are spot on and it's well-written and properly formatted for Kindle. The other recipes and short essays are also great.

Here's a list of the table of contents:
The Pastrami Story
Homemade Pastrami
Pastrami Dry Cure
Pastrami Cooking Rub
Homemade Corned Beef
To-Die-For Corned Beef
A Tantalizing Tale of Tongue
Roasted Tongue
Pickled Tongue
Pickling Spice
Dilly Deli Horseradish Mustard
Chicken Liver Pâté
Corned Beef Pâté
Aunt Barb’s Easy Sandwich Rye
Thousand Island Dressing
Russian Dressing
Deli-Style Cole Slaw
Navy Bean and Pastrami Soup
