All of the current E-Ink readers will mount as a file system if plugged into a Mac. This mean that files can can just be dragged between devices to load/backup eBooks and other files.

Most of the conversion programs you mentioned are written either in Python or Perl. Both of these are supported on a mac. The main thing is not what is supported on a mac but the need to learn a command line on the mac. A Unix like shell is supported but she will need to learn to use it for some of the utilities.
