How to view calibre conversion commands?

I have an .epub file I exported from Apple Pages. If I load it into Calibre, then convert it to .mobi, the cover looks great. But If I use ebook-convert from the command line to convert the .epub to .mobi, the book cover is missing. I tried using --cover=myfile.jpg, but that just places a picture of the file on the front cover.

Is it possible to see how calibre is executing the conversion commands? There's a debug option, but that just generates a bunch of html. I'm interested in duplicating what calibre is doing on the command line.
