In another instance there is no TOC at the start of the individual books, just a very long one for all the volumes together at the start of the bundle. I understand from what I have read here that I can create a new TOC for the split book, but how do I go about it?

Thanks ever so much for your advice!
Click edit book and find the image then right click and choose mark for cover image then save the changes.

Click edit TOC button in Calibre and you can add a TOC either manually which doesn't take long or by xpath. I love this feature and use it alot.
